The article I read this morning about the creation of Lobster Newburg stated that before the mid-to-later 1800's, lobster was considered a poor man's food or even fish bait. Around the time that Lobster Newburg came into being in 1876 at Delmonico's Restaurant in NYC, travel by ship and train got more popular and lobster "took off" in popularity and price. And there you have it - you just learned more about Lobster Newburg that you ever expected to.
